Tomato Sauce

    1. 3 lbs.firm ripe tomatoes
    2. 1 inch cinnamon stick
    3. 3 ozs.brown sugar
    4. 1/4 tsp pepper
    5. 1/4 tsp mixed spices
    6. 1/2 tsp salt
    7. 1 teacup vinegar
    8. small blande mace
    9. 4 red chillies
    10. 1 clove

    Method

    Wash tomatoes and cut up roughly.Place in
    a lined or aluminium pan along with the
    mace, cloves, cinnamon and chilli powder.
    Boil quickly till thick, stirring all the
    time. Rub throughly on sieve, return to
    clean pan and add salt, vinegar spice, sugar
    and pepper. Continue boilling and stirring
    until sauce is consistency of brought
    tomato sauce.
