COCONUT CLOUDS

    Ingredients:

    500g sugar
    2 egg whites
    300g shredded coconut
    50g finely chopped candied lemon peel
    25g flour
    Grated rind of 1 lemon
    Sugar beads


    Metod:

    Pour sugar into a pan,add 100ml water,
    allow to stand for 5 minutes,then bring
    to a boil once and allow to cool. Beat
    egg white till stiff,slowly fold in
    cold sugar syrup. Mix shredded coconut
    with candied lemon peel,flour and grated
    lemon rind,fold into the meringue mix.

    Then pour the mixture into a piping bag
    with round nozzle spout and squeeze clouds
    onto a baking tray lined with baking
    parchment. Put clouds into a preheated oven
    at 125c (gas lowest flame)for about 2 hours.
    Decorate clouds with sugar beads to tast:
    just "glue" them on with a little egg white.
