FEATHERLIGHT SPONGE

    ING:
    3 eggs
    200g (7oz) sugar
    125g (4oz) flour
    1 tablespoon cornflour
    4 tablespoons water
    25g (1oz) margarine
    1 heaped teaspoon baking powder

    METHOD
    Whisk the egg whites and sugar together until pale and thick. Sift the flour and cornflour together and fold lightly into the egg mixture.

    Place the water and margarine in a pan and heat genty until dissolved,then bring to the boil.

    Sprinkle the baking powder over the cake mixture and pour on the boiling water and margarine. When it bubbles, fold the mixture lightly to combine thoroughly.

    Pour into 2 greased and floured 20cm (8inch) sandwich tins or a deep cake tin and bake in a preheated moderate oven, 180oc (350oF)Gas mark 4, for 15 minutes for the sponge sandwich layers, or 35 to 40 minutes for the deeper cake or until a skewer inserted in the centre comes out clean. Cool on a wire rack. Use as requred.
