Set Lemon Cream with Fresh Mango

    875 ml. Thickened Cream
    3 large lemons grated zest & juiced
    170 g Castor sugar
    3 ripe mango

    Heat cream to 75c. Cool to 65c
    Add zest, juice & sugar and mix.
    Allow to cool, pour into individual serving dishes and let set for 4 hours or overnight.
    Serve with diced ripe mango.
