EGG CURRY

    1 Doz Eggs - Hard Boiled - peeled and each cut in half.
    1 Cups of Fresh Milk
    1 teaspoon of Salt
    1 teaspoon full of Maldivefish grounded (Optional)
    I Onion - sliced
    3 Green chillies - sliced
    1 Can of Stewed Tomatoes
    1/10 teaspoon of saffron (Kaha kudu)
    1/2 Fenugreek seeds (Uluhal)
    1 inch peice of cinnamon stick
    1 inch peice of Rampe - if available
    1 inch sprig of karapincha - if available
    1 table spoons of red chillie powder
    2 tablespoon of Roasted Curry Powder
    1 1/2 table spoon oil

    Put the oil in a saucepan and fry all the ingredients except the Milk, Tomatoes, Eggs, curry powder, chillie powder, saffron and salt. When the onions are fried golden brown add the can of stewed tomatoes the chillie powder, saffron and salt and cook for a few minutes.

    Then add the Milk and curry powder and when it starts to bubble add the Eggs, salt to taste and let it simmer for awhile and serve. 6 Servings
