Long Beans (Mekaral) Salad

    Ingredients for Salad Dressing
    1 clove garlic, minced
    1 shallot, minced
    2 tablespoons sherry vinegar
    2 tablespoons soy sauce
    1 tablespoon lemon juice
    1/2 teaspoon chili paste
    1 tablespoon sesame oil
    1 tablespoon peanut oil
    Coarse salt and freshly cracked black pepper

    Ingredients for salad
    1 pound long beans (Mekaral), ends trimmed, beans cut in half crosswise
    Coarse salt, to taste
    2 tablespoons sesame seeds, toasted

    Whisk all the ingredients for dressing together in a large bowl and set aside.
    Bring a large pot of salted water to a boil. Add the long beans. Blanch until crisp tender, about 1 minute. Drain and refresh beans in a bowl of ice water. Drain and toss in a large bowl with the dressing and sprinkle with the sesame seeds.
