Brinjal (Eggplant) Curry

    This is an easy brinjal curry.

    1 lb brinjals
    1 onion, chopped
    2 green chillie, chopped
    1 tsp fenugreek (uluhal)
    1 tsp chillie powder
    1/2 tsp turmeric powder
    1 tsp black curry powder
    1 cup coconut milk
    1/2 cup water
    1 tbsp oil
    1 tsp sugar
    1 sprig curry leaves (optional)
    salt and pepper

    Split the Brinjals in half lengthwise, and cut into 1/2 thick diagonal slices.
    Mix with all the ingredients except the black curry powder.
    Heat oil in a pan.
    Add the Brinjal mixture. Cook under low heat, till the brinjals are limp about 10 minutes.
    Taste and adjust seasoning.
    Remove from heat. Serve to a dish.
    Sprinkle with the black curry powder and serve hot.
