Stir-fried Lotus Root

    2 cups of lotus root, peeled and sliced
    1-2 tsp crushed dried red chillie
    3 tbsp of soy sauce
    1-2 tsp of honey
    3 cloves of garlic
    1/2 inch piece of ginger
    Handful of peanuts (optional)
    Dash of pepper
    1 tbsp of vegetable oil
    salt to taste.
    Grind the ginger and garlic to a paste.
    Heat the oil in a large frying pan or wok.
    Add the ginger/garlic paste. Fry till fragrant. Add crushed chillie, the lotus root stir fry for about five minutes.
    Add the all remaining ingredients. Stir fry for a minute.
    Serve hot.
