Stir-fried Garlic Spinach

    (serves 4)

    1kg (2lb) Spinach
    2 tablespoons Vegetable oil
    4 spring onions
    1 teaspoon soy sauce
    Pinch of sugar
    Pinch of salt
    2 Cloves garlic crushed
    1 teaspoon toasted sesame seeds

    Wash spinach thoroughly and remove all the stems and drain well.
    Heat the oil in a large wok, add the spring onions and fry for 30 seconds. Add spinach and stir fry for about 2 min, until the leaves are coated in the oil and have wilted.
    Add the soy sauce, sugar, salt and garlic and continue stir-frying for 3 minutes.
    Pour off any excess liquid. Transfer to a warmed serving dish and sprinkle with sesame seeds.
