Potato, Capsicums and Tomato Curry

This is a dish that is often served with bread for breakfast.

1/2 lb Potatoes, peeled and cut into cubes
1 onion, chopped
1 onion, quartered
1-2 green chillies, chopped
4 cloves of garlic, chopped
1 sprig curry leaves (optional)
4-5 capsicums, quartered (malu miris/banana peppers)
3 small tomatoes, quartered
1/2 tsp fenugreek seeds
3 red chillies, broken into pieces
1/2 tsp cumin seeds (optional)
1/2 tsp turmeric
1 tsp chille powder
1/2 tsp curry powder
1 tsp mustard seeds
1-2 pieces goraka*
1 - 1 1/2 cups coconut milk
1 tbsp vegetable oil
Salt to taste

Put a pan on medium flame; add the oil, when the oil is hot add the mustard seeds, cumin, fenugreek and fry till the mustard seeds pop.

Next add the chopped onion, green chille, and garlic. Fry till fragrant.

Mix the turmeric, curry powder, chillie powder with potatoes. Add to the pan. Stir and cook for a couple of minutes. Add about 1.5 cups of water. Close the lid and cook under low flame till the potatoes are cooked completely.

Next add all the other ingredients. Add salt to taste. If the curry is too thick add about 1/2 cup hot water. Cook to a boil, stirring constantly.

Serve Hot! This goes well with bread, or string hoppers.

*If Goraka is not available, add juice of 1/4 lime just before taking off the heat.
