Moroccan style sardines with cumin

    1kg tiny fish such as sardines clean and cut open
    8-10 cloves garlic chopped
    1 tbsp ground cumin
    4 heaped tbsp chopped corriander
    pinch of dried red pepper
    juice of 2 lemons
    salt to taste
    6tbsp olive oil

    Combine the ingredients to make a marinade and then leave the fish to marinate for 30 -60 minutes or overnight. Cook the fish over hot coals for about 3-4 minutes per side,untilthey develop grillmarks and are just cooked through.

    Serve with a simple sauce combine 3tbsp of paprika 1/2tsp of cumin 90mlof water or stock of choice in a small pan bring it to the boil. Remove from the heat stir in 2 cloves garlic along with the juice of lemon and corriander.
