Lamb Curry

    Ingredients:
    500 g boneless lamb (cut in to cubes)
    3 medium size onions
    3 medium size tomatoes
    3 green chilies
    Curry leaves
    1 tsp mustard seeds
    1/2 tsp fenugreek seeds
    1/2 tsp turmeric powder
    1 tsp curry powder
    1 tsp chili powder
    1 tsp freshly grounded pepper
    2 tsp finely chopped ginger
    Coconut milk
    5 tbsp Oil
    Salt
    Coriander leaves for garnish

    Preparation:
    Heat the oil in a saucepan; add lamb cubes stir fry for 2-3 minutes. Put mustard seeds and fenugreek seeds and stir fry for another 2-3 minutes. Add curry leaves, green chili, ginger, turmeric, curry powder, chili powder and pepper powder; stir well.
    Meanwhile add the onions and tomatoes in to a Food Processor* and process until onions are finely chopped; then add the mixer to the lamb. Add coconut milk and salt to taste. Stir well. Simmer for 10 minutes. Finally add chopped coriander leaves and serve hot.
    *Note: If you don't have a Food Processor you can use a knife to chop the onions and tomatoes.
