1. 1 young chicken
         2. 3 tbs corn oil
         3. 6 large tomatoes
         4. 4 tbs white arrack
         5. 1/2 pint stock
         6. 1 clove of garlic
         7. 1/4 oz mushrooms
         8. 12 red onions
         9. 1 tsp chopped parsley
        10. 2 tbs magarine
        11. salt and pepper        Method
        Joint the chicken and fry till golden brown
        in a corn oil. Remove chicken and into the 
        same pan add the crushed garlic and the 
        tomatoes.Fry it for a few minutes. Now add the
        stock and arrack. Season with salt and pepper
        Return the chicken pieces to the saucepan and
        bring it to the boil. Cover and cook for 1/2  
        hour on a very slow fire. 
        Meanwile fry the mushrooms and onions gently in 
        a little butter. Add this to the chicken. Just 
        before serving sprinkle the chicken with parsley.
        This could be served with potatoes, boiled carrots,
        and green peas.
