Salmon Carpaccio

    ingredients:
    500 g button mushrooms, halved
    3 garlic cloves, crushed
    1/3 cup olive oil
    finely grated rind 1 lemon
    1/4 cup lemon juice
    2 table spoons chopped parsley
    1/2 tea spoon salt
    1/2 tea spoon black peppper

    method:
    combine all ingredients in a medium bowl. cover chill overnight or until reqired. serve with marinated fetta, olives, semi-dried tomatoes and toasted bread.
