Orental Spanish Seafood Paella

    1 packet Asian indian korma Spice Curry paste
    250g chicken minced
    1 tbsp vegetable oil
    3 tbsp yoghurt
    55g roasted cashew nuts or almond flakes
    55g raisins
    250g basmathi rice soaked for 30 minutes before use
    220ml water
    1 tbsp fresh chopped coriander

    1)Mix chicken, spice paste and yoghurt in a bowl. Heat oil in non-stick pan on medium heat,stir-fry meat mixture for 1 minute until fragrant.Set aside.
    2)put water and rice in the saucepan and bring to the boil. Spread meat mixture on top of the rice. Rediuce heat; cover and simmer on medium heat for 15-20 minutes. Turn off heat. Leave to stand for 10 minutes.
    3)Stir in cashew nuts or almond flakes and raisins. Sprinkle with chopped coriander and serve hot.
