Mexican Shrimp With Hot Chili Pepper Butter

    1. 2tbs olive oil
    2. 2 cloves garlic, minced, divided
    3. 1 cup chopped onion, divided
    4. 2 pounds large shrimp, peeled and deveined, devided
    5. 1/3 cup chilli powder, divided
    6. * teaspoon ground red pepper
    7. * cup butter or magarine
    8. * teaspoon salt
    9. cups hot cooked white rice or yellow rice


    Method

    Heat large nonstick skillet over medium high heat; add
    1tablespoon oil and heat 1 minutes. Add 1clove garlic;
    cook 15 seconds. Add * cup onion and half of shrimp.
    Sprinkel with half of chilli powder; cook until shrimp are
    opaque. Set a side.

    Repeat with remaining oil, garlic, onion, shrimp and chill
    powder. Return reserved shrimp mixture to skillet; add butter
    lime juice and salt. Cook until butter melts.

    Spoon shrimp mixture on Rice; serve with lime.
