Pancake or Egg Rotti

      Ingredients:
      4 ozs. flour
      1 tsp. baking powder
      1 egg
      1 cup milk and water
      A pinch of salt
      (1 more beaten egg or some orange juice mixed with a little sugar which is optional)


      Method:
      In a blender mix all the above ingredients till it makes a nice batter. If it gets thick add a little cold water. Grease lightly a skillet or a flat pan with a little oil or margarine or butter. Pour on batter to form suitable sized cakes. When bubbles stop rising turn and lightly brown the other side. This is quick- do not overcook. If you like, beat up an egg and put 1 tspful of it on to the middle of the rotti. Another alternative is, mix a teaspful of orange juice with a little sugar and put it on the middle of each rotti instead of beaten eggs.

      This is good for breakfast or tiffin or light lunch. !
