Lobster Shells

    8 Lobsters ( Meat from 1 lb Lobster)
    2 tsp Lemon juice
    2/3 cup Whipping cream
    1/2 tsp grated lemon peel
    2 tsp chopped fresh Dill
    Red cayenne pepper
    Black pepper
    8 large cooked Lobster shells
    Fresh Dill if desired
    Lemon slices if desired
    Salt

    Method:
    Pre heat oven to 375 F (190 C).
    Chop lobster meat into coarse pieces.
    Put into a bowl with lemon juice and 2 tablespoons of whipping cream.
    Season with salt and red pepper.
    Mix well.
    Fill shells with lobster meat mixture.
    Arrange in a greased 1-1/2 quart oblong baking dish.
    In a bowl mix together remaining whipping cream, lemon peel and Dill.
    Season with salt and black pepper.
    Pour over shells.
    Cover dish with foil.
    Bake for 15-20 minutes or until heated through.
    Baste with sauce half way through cooking time.
    Garnish with lemon and dill pieces if desired.
    Makes 4 first course servings.
