Fish Pudding

    Ingrediants for 8 portions.
    To every lb of boiled fish allow one cup of cleaned & boiled small prawns.
    1/2 cup chopped onions,
    1/4 cup chopped parsley,
    2 dessertspoons of flour,
    1 egg. (1 1/2lb fish boiled for 8 portions)
    1/2 cup capsicum chillies
    2 dessertspoons of margarine
    1 1/2 of fish stock or milk

    Heat fat. Add the onions,chillies, & parsley saute for a few minutes & add the flour. Cook for a minute or two & add the stock gradually. Cook until thick & remove from fire.

    Add the boiled fish & the prawn with the beaten egg.
    Season with pepper & salt with the lemon juice.Grease well a mould & sprinkle dry bread crumbs. Pack mixture into mould & bake for about 15 mts. Unmould & serve hot or cold with vegetables or salad.
