4 - 5 medium size Potatoes
1 tbl spoon butter or margarine or Olive Oil
pinch of salt
1 small can tuna
1 big oinion (chopped finely)
3 - 4 green chillies (chopped finely)
1 small red tomato (chopped)
small can sweet corn
100g grated cheese
3 - 4 tbl spoons Mayonaisse
1 tblspoon lemon juice
pepper & salt as required
Salad leaves (Iceberg or Lettuce)

Wash the Potatoes thoroughly and dry them on a paper towel. Apply butter or margarine or olive oil on the potatoes and sprinkle salt on them. Preheat the oven to 160C and bake the potatoes for about half an hour or until done. (The Potatoes will look shrinked) When slightly cooled mark a cross on the potatoes with a sharp knife and press the skin so that the patato should come out easily.

Meantime mix the tuna with onion, green chillie, tomato, sweet corn,cheese and mayonaisse, salt, pepper and make the Salad. Arrange the salad leaves on a large plate and put the Tuna Mix on it.

Serve with hot baked Potatoes, ideal for a quick dinner. Print this recipe       Email this recipe
